i'm Nicole

I started this blog after I was diagnosed with Celiac Disease. After struggling to adjust to a mandatory gluten free diet, I wanted to create a resource for others trying to learn their way around this gluten filled world.

This gluten free egg fettuccine pasta from Trader Joe’s had a little too many carbs for my liking at 45g, but it sure was good!

The noodles came out so soft and al dente that you could hardly tell it was gluten free.

I would definitely recommend trying this egg-based pasta out if you are not too concerned about your carb intake! It uses a blend of brown rice flour, potato starch, whole egg powder, and egg white powder instead of wheat flour. Pairs great with Alfredo sauce.
