Simple Pepperoni Zucchini Pizza Boats

Trying to eat more veggies but craving the taste of pizza? Well then here is a low-carb, gluten free healthy pizza recipe for you! It’s a sneaky way to get a refreshing taste of veggies covered in cheesy, pizza goodness! I used a classic pepperoni topping for my zucchini pizza boats, but feel free to try this recipe with your favorite pizza toppings!

Serves 2

30 Minutes

  1. ΩPreheat oven to 350° Fahrenheit.

  2. Cut off the ends of the zucchini and then cut zucchini in half lengthwise. With a spoon, scoop out the seeds of the zucchini.

  3. Line a baking sheet with parchment paper and line the zucchini on the pan. Cover each zucchini evenly with olive oil and season with salt and pepper. With a spoon, fill the zucchini boats with pizza sauce. Top with mozzarella cheese and gluten free pepperoni. Bake until zucchini is tender and cheese is golden about 18-20 minutes.

  4. Garnish with fresh basil and red pepper flakes. Enjoy!



  • 2 medium zucchini (about 8 inches)

  • pizza sauce

  • 1 cup mozzarella cheese

  • gluten free pepperoni 

  • fresh basil leaves

  • 2 tablespoons olive oil

  • optional: red pepper flakes for topping​
