Gluten Free Animal Cracker Cheesecake

Here is an animal cracker cheesecake recipe inspired by this cheesecake recipe I found on Delish but has been modified to make it gluten free. 


For the cheesecake crust, I used Goodie Girl Cookies Gluten Free Magical Animal Crackers. This would be a great recipe to try out with the kids because of the adorable animal cracker shapes!

ingredients

For the Crust

  • 2 cups (1 box) of Goodie Girl Cookies Gluten Free Magical Animal Cracker Cookies, finely crushed. Be sure to save a few for the garnish.

  • 5 tablespoons butter, melted

  • 2 teaspoons sugar

  • 1/8 teaspoon salt

 

Cheesecake Filling

  • 8oz cream cheese

  • 1 cup sugar

  • 3 Large eggs

  • 1/2 cup sour cream

  • 1 teaspoon vanilla extract

  • 2 tablespoons gluten free flour (I used Bob's Red Mill white rice flour)

  • 1/2 teaspoon salt

 

For Garnish

  • whipped cream

  • a couple of Goodie Girl Cookies Magical Animal Crackers, uncrushed

  • sprinkles (if desired)

Step 1:

Preheat oven to 350° Fahrenheit. In a large ziplock bag, crush up Magical Animal Crackers. In a large bowl, combine the crushed magical crackers, melted butter, sugar, and salt. Place in either an 8" or 9" springform pan or a regular cake pan lined with parchment paper. Bake crust for 10 - 12 minutes until it reaches a light gold color.

 

Step 2:

Reduce oven to 325 ° Fahrenheit. Prepare the filling of the cheesecake by mixing the cream cheese and sugar with an electric mixer until no lumps remain. Add in one egg at a time to the mixture. Add in vanilla extract, sour cream, gluten-free flour, and salt and mix well. Pour mixture over crust and bake in the oven for about 1 and a half hours (90 minutes). Delish recommends baking until the center of the cheesecake only slightly jiggles.


Step 3:

Remove cheesecake from oven and let cool on a cooling rack for about 1 hour. Move cheesecake to the fridge to let cool for another 5 hours or overnight. 


Step 4:

Remove cheesecake from the springform pan or cake pan and decorate with whipped cream, magical animal crackers, and sprinkles if desired. Enjoy!
