Gluten Free Socialite is a look into my personal experience of living with celiac disease. Through this, I hope to share the knowledge of what I have learned during my journey with others who are struggling with celiac disease, gluten intolerance, or from a gluten allergy. Eating an entirely gluten free diet has dramatically changed my life and I hope to encourage others to commit to living a healthy lifestyle.

Nicole. The Full Story.

What fuels you? For me, it was NOT gluten.

 

My journey began three years ago when I discovered I had celiac disease. It was a huge challenge at first that had constant setbacks. I felt as though I had been diagnosed with something that I had no idea what it was & had been given no real resources on how to overcome it other than the words, "don't eat gluten".

 

I tried my best to cut gluten out of my diet, but whenever I felt like I was starting to feel better, WHAM, gluten would somehow get into my food and make me sick once again. My symptoms would take up to two weeks to run their course. Learning how to not eat gluten was not as easy as it sounded.

Along the way, I started to research the disease on my own, learned as much about cross-contamination as I could, conducted trial & error of the different foods that I was eating, &  had conversations with others suffering from Celiac. Through all of this, I developed an understanding of my body, learned what upsets it, became better at avoiding gluten, and ultimately began to feel normal & healthy again. 

 

The biggest help for me was hearing from other Celiac's who were experiencing the same symptoms that I was going through. Listening to their stories made me feel like I was not alone and that the disease was not in my head.  The comfort I felt from others sharing their story is the reason I decided to open up and share my own story.

 

On my blog, I share the products that I enjoy, the restaurant that I have tried, and some recipes to try.
