Gluten Free Banana Bread

This is a comforting recipe that is a perfect use for those bananas that have sat out a little too long and you may be tempted to toss in the trash. Once you pop this banana bread in the oven, it will soon fill your home with a wonderful warm aroma of the delicious banana bread you are about to eat!

ingredients

  • 1/3 cup coconut oil

  • 3 ripe bananas

  • 2 eggs

  • 1 1/2 cups of gluten free flour (I used Outrageous Baking All Purpose Baking Flour for this recipe)

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon vanilla

  • 1 cup brown sugar

Step 1:

Preheat oven to 350 degrees F. Grease a 9x5 inch loaf pan.


Step 2:

In a large bowl, mix flour, salt, baking soda, and cinnamon.


Step 3:

In a separate bowl, mash up the bananas. Add vanilla extract and eggs and continue to mash together until no yellow streaks from eggs remain. Add in dry ingredients to the bowl with the wet ingredients and mix until combined.


Step 4:

Spoon the batter into the loaf pan and bake in oven for 60 to 65 minutes until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes and enjoy!
