Gluten Free Mushroom Cauliflower Gnocchi

I started this blog after I was diagnosed with Celiac Disease. After struggling to adjust to a mandatory gluten free diet, I wanted to create a resource for others trying to learn their way around this gluten filled world.

One of my favorite meals to cook lately has been with this gluten free cauliflower gnocchi that can be found in the frozen food section at Trader Joe's. 


For this meal I used mushrooms and pancetta Italian style bacon as my key ingredients in they mid week comfort meal.

Serves 1

20 Minutes

ingredients

  • 1/2 package of Trader Joe's cauliflower gnocchi

  • 1/2 container mushroom medley Alfredo sauce

  • 5-6 sliced white mushrooms

  • 4 oz pancetta

  • 1/4 cup cut up spinach

  • 3-4 cut up fresh basil leaves

  • 1/4 cup mozzarella cheese

  • 2 tablespoons olive oil

directions

Step 1:

Heat a medium size pan with 2 tablespoons of olive oil until warm. Add half a package of Trader Joe's cauliflower gnocchi. Cook gnocchi for 8-10 minutes flipping the gnocchi half way through. Cook each side of the gnocchi is golden brown.


Step 2:

Slice mushrooms and add to gnocchi on the pan. Add in spinach, mozzarella cheese, pancetta, and fresh basil leaves and let cook for another 3-5 minutes, until mushrooms are cooked.


Step 3:

Add in half a container of mushroom Alfredo sauce from Trader Joe's and cook for an additional 3-5 minutes on medium heat until sauce is warm.


Step 4:

Serve warm and enjoy.
