Gluten Free Simple Pepperoni Zucchini Pizza Boats

I started this blog after I was diagnosed with Celiac Disease. After struggling to adjust to a mandatory gluten free diet, I wanted to create a resource for others trying to learn their way around this gluten filled world.

If you are trying to eat more veggies but are craving the taste of pizza, then this recipe was made for you! Here is a low carb, gluten free, healthier version of a pizza recipe for you! 


These zuchhini pizza boats are a sneaky way to add veggies into your diet. For my zucchini pizza boats, Iused a classic pepperoni topping, but feel free to try this recipe with your favorite pizza toppings!

Serves 2

30 Minutes

ingredients

  • 2 medium zucchini (about 8 inches)

  • pizza sauce (make sure it's gltuten free)

  • 1 cup mozzarella cheese

  • gluten free pepperoni (also check that this is gluten free)

  • fresh basil leaves

  • 2 tablespoons olive oil

  • red pepper flakes, for topping (optional)

Step 1:

Preheat oven to 350° Fahrenheit.


Step 2:

Cut off the ends of the zucchini and then cut zucchini in half lengthwise. With a spoon, scoop out the seeds of the zucchini.


Step 3: 

Line a baking sheet with parchment paper and line the zucchini on the pan. Cover each zucchini evenly with olive oil and season with salt and pepper. With a spoon, fill the zucchini boats with pizza sauce. Top with mozzarella cheese and gluten free pepperoni. Bake until zucchini is tender and cheese is golden about 18-20 minutes.


Step 4:

Garnish with fresh basil and red pepper flakes. Enjoy!
