Gluten Free Turkey Stuffed Bell Peppers

I started this blog after I was diagnosed with Celiac Disease. After struggling to adjust to a mandatory gluten free diet, I wanted to create a resource for others trying to learn their way around this gluten filled world.

This delicious meal is the turkey stuffed bell peppers recipe I discovered in the Delightfully Free Gluten Free cook book. It is a refreshing, filling, and a flavorful gluten free meal. Here is how I did it:

Serves 6

40 Minutes

ingredients

  • 6 green bell peppers

  • 1 pound ground turkey

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 tablespoons garlic, minced

  • 1 teaspoon salt 

  • 1 teaspoon oregano

  • 12 oz of tomato sauce

  • 1 1/2 cup brown rice

directions

Step 1:

Cook brown rice. Make in rice cooker, or cook in a pot with 2 parts water for each part rice. Cook for about 20 minutes until all water in gone. 


Step 2:

Bring a large pot of water to boil. Wash green peppers, cut off the tops, and remove the seeds. Place the peppers in boiling water and cook for 3-4 minutes. When done, let air dry on a paper towel. 


Step 3:

Preheat oven to 350º degrees. Spray baking dish large enough to place all the pepper in. Heat a large skill with olive oil and cook turkey meat for 8 minutes until cooked. Drain any oil and place add garlic, salt, oregano 12 oz tomato sauce and cooked rice in skillet.


Step 4:

Place the cooked peppers in the baking dish and fill each with the meat stuffing. Bake uncovered for 10-12 minutes. Top each pepper with remaining tomato sauce, a dollar of sour cream, sprinkle with oregano and sliced green onions.
